About our speciality

   ​​​​​​​​​As you may know, shabu shabu is a type of Japanese hotpot in which thinly sliced beef, pork and vegetables are swished in Umami dashi broth, and dipped into house-made sauces.

Macoron , chef Mayu offers you to explore the attractive world of wagyu beef by her cooking show with taking very care of you by herself at 14 seats counter. Not only melt in your mouth Japanese beef from Miyazaki, we hope you to enjoy our wagyu beef which is a hybrid between Tajima (based cattle of Kobe beef) and Black Angus from Oregon. Why we use this hybrid wagyu beef is to enjoy much more juicy and meaty taste yet luxurious taste with melt-in-the-mouth textured. Red part which has much more Umami than Miyazaki beef makes ultimate harmony with our house made dipping sauces. These bring out the best flavors of the meats, as well as the fresh vegetables wrapped up slow cooked Japanese premium pork we serve with the dashi broth. Not only traditional sauce such as ponzu or sesame based sauce, our unique sauce and seasoning inspired by French, Italian and Spanish cuisines boost the taste of these wagyu beef ultimately.
   Prior to serving the shabu shabu, chef Mayu prepares a few courses of appetizers “ala minute” to set the stage for the main course related to shabu shabu -- swish. She loves to interact with the guests while cooking, making the dining experience very fun and informative. We are one and only unique shabu shabu omakase restaurant in the world as opposed to Macoron, where is the world's first shabu shabu omakase restaurant.
